Hi, I’m Nisha.Here,through my blogs I would like to share some unique, traditional vegetarian tastes and flavours of Kerala. Kerala has produced diverse, natural, nutritious as well as tasteful vegetarian dishes. The concept of homestead farming helped the Kerala women to make these unique dishes. Without using artificial flavours and colours they have produced hundreds of varieties of dishes. The famous “Sadya” in banana leaf has attracted many. To preserve and exchange these recipes is the main purpose of this blog. I’m sharing the recipes that I have encountered and those which attracted me . I am very happy to introduce you to some of the long lost traditional recipes . I hope you will enjoy them.

Vachuparathi and Mulaku Arachathu

Vachuparathi

Ingredients

  • 2 cup atta (wheat flour)
  • 1/2 cup grated coconut
  • 5 onion flakes
  • a small piece of ginger
  • 1 green chilli/1/2 tsp chilli powder
  • 1/4 tsp asafoetida powder
  • 1/4 tsp powdered cumin seeds
  • salt (to taste)
  • 1 tsp butter
  • water (as required)
  • a few curry leaves
  • ghee (for greasing the pan)
Method

Put the onions, ginger, chilli and curry leaves in the mixer and turn it for just a moment so as to crush the ingredients. Mix this with the wheat flour. Add all the other ingredients to this. Mix it well with hand by adding small quantities of water until it turns to a thick dough. Now heat the flat pan (dosakkallu). Grease it with ghee (if it is a non-stick pan sprinkle ghee on the vachuparathi). Put a small ladle full dough on the pan.Make it round with fingers. Dip your fingers in water so that the dough won't stick to your fingrs.After sometime turn the upside down.You can serve it when both the sides become golden brown.



Mulaku Arachathu

Ingredients


  • 15 dried red chilli
  • 7 onion flakes
  • 1/4 cup coconut oil
  • salt (to taste)
  • a few curry leaves
Method

Heat the coconut oil in a frying pan.  Fry the chilli till it turns brown.  Take the chillies from the oil.  Now fry the onions until it turns brown and put it in the mixer along with chillies, curry leaves and salt. Grind it to a smooth paste.  Take it in a bowl and add the heated oil and mix it well.
