Hi, I’m Nisha.Here,through my blogs I would like to share some unique, traditional vegetarian tastes and flavours of Kerala. Kerala has produced diverse, natural, nutritious as well as tasteful vegetarian dishes. The concept of homestead farming helped the Kerala women to make these unique dishes. Without using artificial flavours and colours they have produced hundreds of varieties of dishes. The famous “Sadya” in banana leaf has attracted many. To preserve and exchange these recipes is the main purpose of this blog. I’m sharing the recipes that I have encountered and those which attracted me . I am very happy to introduce you to some of the long lost traditional recipes . I hope you will enjoy them.

Puttu and kadala curry /chana curry



Puttu

Ingredients

  • 2 cup roasted rice flour
  • 1 cup grated coconut
  • salt ( to taste)
  • water ( as required)
Method

Add some salt to rice flour.  Sprinkle some water in the powdered rice just to make the powder wet(do not put a lot of water).  Mix it.  Boil water in the puttu cooker (puttu kudam).  Put 1 spoon grated coconut into the puttu kutti.  Fill half the puttu kutti with the rice powder.  Again add 1 spoon grated coconut. Fill the rest with the rice powder. Add another spoon of grated coconut.  Close the puttu kutti and fix it on the top of the puttu cooker.  Steam it for 8-10 minutes.





Kadala curry / Chana curry



Ingredients

  • 1 cup chana (Bengal gram)                                                                          
  • 1 tsp chilli powder
  • 1/2 tsp turmeric powder
  • 2 tsp coriander powder 
  • 1/2 tsp garam masala powder
  • 1/4 cup thin,square pieces of coconut ( small pieces)
  • salt (to taste)
  • 2 cup water
For tempering,


  • 2 tsp coconut oil
  • 1\2 tsp mustard seeds
  • 2 dried chilli
  • a few curry leaves

    Method

    Wash and soak the chana overnight.  Cook the chana along with coconut pieces, chilli powder, salt and water in a pressure cooker until 3 steams.  Heat the coconut oil in a pan.  Put the mustard seeds and dried chilli pieces. Wait till it bursts.  Mix the turmeric powder, coriander powder and garam masala powder together with some water.  Put it into the coconut oil.  Stir it well.  Add the cooked chana into it.  Boil it for some time. Garnish it with curry leaves.
